Coconut Champagne Mango DaiquiriAs I write this it is early March and the first champagne mangoes have shown up on the shelves at Costco. These mangoes are in my opinion by far the best ones available, although they are smaller than normal mangoes and, you guessed it more expensive. So fire up your favorite adult drink frozen concoction maker and whip up a batch to bring a little bit of the tropics to your part of this frozen wasteland the United States has become this year.

Ingredients: (Makes 2 Drinks)

  • 2 ounces of coconut rum
  • 1 ounce of light rum
  • 1 ounce of orange cream vodka (Secret Ingredient)
  • 1 ounce of Roses Sweetened Lime Juice
  • 1 ½  tablespoons bakers sugar
  • 1 champagne mango
  • Whipped cream
  • Cut up mangoes.
  • Lime wedge.
  • Sparkling sugar
  • 2 cups of ice.

Mixing instructions:

Prepare a 12 ounce collins or hurricane glass (your preference) by wetting the rim with the lime wedge and dipping it in the sparkling sugar, depending on your taste for the day.

Place the champagne mango, the two rums, vodka, lime juice, sugar and ice into your margarita blender and blend to your desired consistency.

Carefully pour into the collins glass and top with whipped cream.

Garnish with a lime wedge, add a straw and serve with cut up mangoes on the side.
