Margarita-marinated pork chops

watercress salad not only taste great but are a feast for the eyes as well.

Ingredients for the pork chops.

  • ¼ cup of lime juice.
  • 2 finely chopped Red Thai chilies.
  • 2 cloves of crushed garlic.
  • ½ cup of orange marmalade.
  • ½ cup of tequila (your favorite)
  • 1/3 cup of fresh coriander that has been finely chopped.
  • 4 – 8 pork loin chops.

Ingredients for the watercress salad.

  • ¼ cup of lime juice.
  • 2 tablespoons of tequila.
  • 2 oranges.
  • 2 tablespoons of olive oil.
  • 3 ½ ounces of trimmed watercress.
  • 1 thinly sliced avocado.
  • ½ cup of coriander leaves that have been loosely packed.

 Combining all this in the one great meal is an easy process but will require you to start preparing it the night before your party or meal. Simply follow the instructions listed below.

Take the tequila, marmalade, coriander, garlic, lime juice and Thai chilies and put them into a bowl large enough to hold whatever number of pork chops you’ve decided to prepare.

Once mixed cover and refrigerate overnight.

When it’s time to start making dinner the next day create your orange and watercress salad by segmenting your oranges into a large bowl and turning in the rest of the ingredients. Mix the salad taking care not to damage the orange segments.

Next remove the pork chops from the marinade taking care to reserve the leftover marinade for basting.

Heat your pre-oiled barbecue grill to high and cook your chops (165°F internal temperature) brushing them with the leftover marinade while cooking.

Serve with a couple of margaritas either shaken or frozen and you’ll have a dinner that will impress almost anybody.
